Red Lentil Dhal with Sweet Beats & Cucumber Raita
RECIPE SERVES 3-4
Ingredients:
- 2-3cups Red Split Lentils (washed and drained)
- 4-6cups filtered water
- 1tablespoon turmeric powder
- 1tablespoon finely ground rock salt
- black pepper to taste
- 2tablespoons of Ghee
- 1tsp Black mustard seeds
- 1tsp cumin seeds
- 1/2 tsp ajwain seed
- 1whole brown onion fined chopped
- 1ginger knob finely chopped
- 1clove garlic fined chopped
- 1whole Beetroot (washed, peeled and roughly diced)
Probiotic Cucumber Raita:
- 1/2cup Full Fat probiotic rich yoghurt, diluted with 1/4cup filtered water (add in water slowly to make desired consistency)
- mix in 1/4tsp cumin
- salt, lemon juice, pepper to taste
- 1/4cup Organic Lebanese cucumber diced
- fresh herbs of choice finely chopped
- Mix well and serve on top or on side of Dhal
Other Dhal Toppings (optional): Homemade Saukraut, toasted Almonds, fresh salad, ghee..
METHOD:
- To heavy bottomed pot add lentils, water, turmeric, salt and pepper - bring to boil and then reduce heat and let simmer for 15-20min
- In hot cast iron wok or heavy bottom fry pan add in ghee, when hot pop mustard seeds, then cumin seeds and then Ajwain seeds
- Fry onion until caramelised and browned then add in ginger & then garlic and fry for 2min
- Add wok mixture to dhal pot and stir in, cook for another 5 min on low heat with lid on (add more water if necessary
- Reheat wok and add in beets and splash of water, steam until tender and then add to dhal pot
- Serve warm with ghee, raita and desired toppings
